Shrimp + Ginger Potstickers

INGREDIENTS

  • 12oz / 350g shrimp, peeled and deveined

  • 1/4 cup green onions, chopped

  • 1 Tblsp grated ginger

  • 2 tsp ligh soy sauce

  • 2 tsp sesame oil

  • 2 tsp corn starch

  • 24 dumpling wrappers (4" / 10cm dia)

  • Salt + Pepper to taste


METHOD

  1. Pulse/blend shrimp, ginger, soy sauce and sesame oil in a blender to a coarse paste (maintaining some larger pieces of shrimp).

  2. Place in a bowl, add and incorporate the corn starch, green onions, and season with salt + pepper to taste. Mix thoroughly to combine.

  3. To make the dumplings, place 1 heaping teaspoon of filling in the center of a wrapper

  4. Lightly wet the edges with a finger, with water.

  5. Fold the dumpling in half and close with pleats. Press tightly to seal. (for extra texture, dip the bottom in water and sesame seeds)

  6. To cook the dumplings, heat a non-stick frying pan on medium heat.

  7. Add 1 tablespoon of oil, add the dumplings and brown/crisp the bottom side of the dumplings.

  8. Add 1/2 cup of water and close with a tight fitting lid. Let steam/cook for 3-4 minutes until the water is evaporated.

  9. Plate up and serve with your favorite dumpling sauce (i.e.: Chinese black vinegar, ponzu sauce, or straight soy sauce).
