Berry Sheet Pan Cake

This is a cake my mom often made, and works with stone fruits as well. I am not much of a baker/pastry chef, so if I can make this one, everyone can.

Ingredients:
- 7oz / 200 g soft butter
- 1 1/2 cups / 320g confectioners sugar
- 2 tsp vanilla extract
- 4 eggs
- 2 1/2 cups / 375g flour
- Zest of 1/2 lemon
- 1 tsp salt
- 2 tsp baking powder
- 16oz / 450g mixed berries - 1 tblsp confectioners sugar to dust berries
Method:
1. Preheat oven to 350F / 175C
2. Place soft butter, sugar, vanilla, salt and lemon zest in a bowl and beat until light and creamy.
3. Add eggs, one at a time and beat well after each addition.
4. Sift the flour and baking powder into a bowl, then add flour mixture and milk, alternatively in thirds and fold until combined.
5. Pour mixture into a greased 8” x 12” / 20cm x 30cm baking dish lined with non-stick parchment paper.
6. Sprinkle and toss the berries with the sugar and place evenly on top of the mixture.
7. Bake for 50-60 minutes or until cooked when tested with a wooden pick.
8. Dust with confectioners sugar and serve.
